Quinoa with Portobello

Ingredients
1 c quinoa
2 large portobello mushrooms
1/2 yellow and red bell peppers 
A handful of spinach 

Dressing

1 Tb Apple cider vinegar
1 Tb Coconut Oil
1 Tb Red wine vinaigrette 

Directions 
1.Cook quinoa, peppers and mushroom.  
2. Drain.
3. Add in spinach, apple cider vinegar, coconut oil and red wine vinaigrette.

    advice

    Whenever I'm cooking a meal, I ask myself how balanced it is.  Do I have healthy carbs (whole grains), fruit, a variety of veggies, healthy fat (coconut oil, almonds, avocado) enough protein and calcium?  If I don't have all of these, I strive to have them in my next meal.
