1 c quinoa
2 large portobello mushrooms
1/2 yellow and red bell peppers
A handful of spinach
1 Tb Apple cider vinegar
1 Tb Coconut Oil
1 Tb Red wine vinaigrette
1.Cook quinoa, peppers and mushroom.
3. Add in spinach, apple cider vinegar, coconut oil and red wine vinaigrette.
