Veggie steak sweet potato dish + young coconut
Ingredients
4 Vegan black pepper steak patties (found in a vegetarian store here in HK, came with a teriyaki sauce)
1/2 c Quinoa (don’t need but I added)
2 small sweet potatoes
1 c spinach
1 Tbs olive oil
3 small mushrooms, cut in half
*You should use a teriyaki or soy sauce and add black pepper and a pinch of sea salt
Directions
1. Boil water. Add in the quinoa, sweet potatoes, mushrooms and spinach. Cook for 5-10 mins. or until sweet potatoes are soft.
2. Drain. Cook the steak patties in a stovetop pan using coconut oil instead of butter.
3. Add the patties to the pot of quinoa, sweet potatoes and veggies. Add in the teriyaki or soy sauce. Add salt and pepper to taste.
