Chunky Minestrone

Ingredients 
1Tbs olive oil
1c chopped onion
1 medium carrot, halved lengthwise and thinly sliced
2 cloves garlic, minced
14 ounces of diced tomatoes
1 ounce reduced-sodium chicken broth
1c water 
1/4c brown rice 
1 tsp dried Italian seasoning 
3c baby spinach
15 oz beans (any...chickpeas, lentils, etc.)
1 medium zucchini, quartered lengthwise and sliced (about 1 1/2 c) 
1/4 tsp ground black pepper 
1/8 tsp salt
Sweet potato (optional)
Nutritional yeast (optional) for parmesan sprinkled on top

Directions 
1. Cook the rice first.  Add in all other ingredients.  Slow cook for about 45 minutes.

    advice

    Salads and soups at restaurants can be so unhealthy- watch out!  The dressings they use and the creamy options are filled with trans and saturated fat.  However, with only a few substitutes, you can find TONS of nutrition in these salad and soup recipes.  They are simple, yet divine. Use them as side dishes or small meals.
