3 cups couscous
1 lemon juiced
1/2 cup chopped parsley
1/2 cup torn mint leaves
1/4 cup olive oil
1 spoonful of chia seeds
1 orange or another color bell pepper
2 cups sweet tomatoesoptional: feta cheese and cashews
1. Cook the couscous and let it cool off.
2. Chop up the parsley, mint leaves and bell pepper
3. Add all ingredients into a bowl and mix well together.
