1 c whole-wheat (and gluten-free if possible) penne pasta
1 handful of spinach
4 mushrooms cut in half
5 sweet tomatoes
5 small cubes of tofu
2 Tbs olive oil
1 Tbs coconut oil
1 Tbs nutritional yeast to sprinkle on top
1. Boil water in a pot. Cook the pasta for 8-10 minutes. Drain the pasta.
2. Add all other ingredients into the pot with the pasta, except the sweet tomatoes and spinach. Cook for 5 mins.
3. After taking off the stovetop, add in the tomatoes and spinach.
4. Serve and sprinkle nutritional yeast on top.
