Stuffed Tomatoes

Ingredients
4 medium tomatoes 
1 tsp olive oil
1 small onion, finely chopped
1 garlic clove, minced
2 c spinach, chopped

Topping
1/4 c sunflower seeds
2 Tbs nutritional yeast
2 Tbs fresh parsley, chopped
Pinch of sea salt
Freshly ground pepper 

Directions
1. Cut out the medium tomatoes, leaving a hole in the inside.  
2. Put the olive oil, onions, garlic and spinach inside the tomatoes evenly.  
3. After mixing together the topping, place a small amount on top of the tomato to decorate and season.  

This makes for a fancy side dish at special events or when hosting a party.

    Advice

    Usually when we hear snacks, we think it's unhealthy.  Here, you don't have to worry.  Everything I post is a healthier option for snacking! They aren't a complete meal, but will keep you full for a short period.  They might also be a great side dish for your meals.
