Ingredients
1 onion
2 tsp chili powder
1 pinch ground cinnamon
Salt and pepper to taste
1 (2 inch) piece fresh ginger, peeled and thinly sliced
1 pound carrots - peeled and diced
3 cloves garlic, crushed or to taste
2 tablespoons olive oil or coconut oil
1 cup coconut milk/soy milk (half and half)
1 cup orange juice (juice an orange)
1 package of tofu (optional)
Directions
1. Saute the onion, ginger, garlic, chili powder and ground cinnamon.
2. Add chopped carrots, coconut milk/soy milk, add orange juice into a pot.
3. Cook all together until the carrots are soft.
4. After cooling it off, put everything in the blender and blend until smooth.
5. Grill tofu in a pan and then add to the soup.
Optional: Add basil or another seasoning on top.
This dish is great with whole-grain crackers or roti (or used as a curry or pasta sauce).
