Ingredients
1 C quinoa
1 red bell pepper
1 c. baby corn
1/2 onion
1 orange
2 Tbs red wine vinaigrette, or to taste
Directions
1. Cook the quinoa (only takes about 5-10 mins.)
2. Cut the bell pepper, onion and orange into small pieces.
3. Once quinoa is cooked, drain it. Then add all ingredients to the quinoa, including the dressing.
4. Put in the fridge for about 1 hr or until cool.
*This makes for left-overs or to bring to lunch the next day.
