Ingredients
1 Tbs freshly squeezed lemon juice
1 Tbs extra virgin olive oil
1/4 to 1/2 tsp sea salt
1/2 tsp ground turmeric
Dash cayenne pepper
1 packed c kale, thinly sliced
15 oz garbanzo beans (soaked overnight)
1-2 Tbs red onion, finely diced
1/2 c red bell pepper, diced
Directions
1. Place the lemon juice, olive oil, salt, turmeric and cayenne pepper in a medium sized bowl and mix well.
2. Add kale to the salad dressing. Mix well.
3. Add garbanzo beans, red onions, red bell pepper and mix well.
4. Serve or refrigerate until serving.
Note: No ingredients get soggy, so this could be a great lunch for work or picnic food.
