Ingredients
1c cashews, soaked for at least 1 hr.
2 Tbs lemon juice
1 garlic clove
Pinch of sea salt
1c basil leaves
Directions
1. Put the garlic into food processor (or blender) and run until garlic is chopped.
2. Add cashews, lemon juice and salt. Then place all ingredients except basil into the food processer and process until smooth.
3. Add basil and pulse until basil is chopped up and combined into cheese.
Basil Oil
1. Finely chop 4 T basil and add to 1/4 c olive oil (or coconut oil).
